7 Up Biscuits


2 c Bisquick mix
1/2 c sour cream
1/2 c 7up
1/4 c melted butter
Preheat oven to 450ยบ
Cut sour cream into your Bisquick mix, then add 7up - it will make a soft dough. Now sprinkle your counter with a little Bisquick mix then add dough and pat it out.
Melt butter and pour it into a 9" square baking pan. Cut your biscuits up and arrange them in pan on top of melted butter.
Bake 12-15 minutes or until golden brown.

**I first tried these at a friend's house and I LOVED them! So I looked on Pinterest for the recipe and found this one taken from THIS BLOG.  They are very easy to make! Try them out and let me know what you think!

Cheesy Garlic Twists

Pizza Crust Dough
Garlic Butter
     (1/4-1/2 cup butter or margarine softened. Stir in 1/4 tsp garlic powder.) 
1-2 cups Mozzarella Cheese
Italian Seasoning

On a lightly floured surface, roll dough out in a rectangle shape.  Spread Garlic Butter over dough. Top with Mozzarella Cheese. Starting with long edge of dough, roll dough up like you would when you make cinnamon rolls. Slice rolls off end (about 1 1/2" thick). To make into stick/twist, grab a hold of opposite sides of the roll (not the edges that have been cut) and genlty pull to stretch it. When it's long enough to put a twist in it, then twist it once and place on a greased baking sheet. Sprinkle lightly with some Italian Seasoning. Let rise till almost doubled in size. Bake at 350 degrees for 20 minutes or until golden brown. Serve with warmed pizza sauce. 

*These are so yummy! And easy! A big hit with the kiddos too!

Spanish Rice


2 cups non instant rice
3 Tbls butter
4 cups chicken broth
1 heaping Tbsp tomato paste

In large skillet melt butter and toast the rice in the butter.  Add chicken broth and tomato paste. Mix with fork til all blended.  Cover and simmer for 20 min.

**This recipe came from my friend.  She uses 4 cups of water then adds 4 chicken boulion cubes. I love how easy this recipe is.
**You can add some diced tomatoes, green peppers and onions if you want. Add them when you add the water and let them simmer with the rice.

Baked Beans


Jim's mom shared this recipe with me.

3 cans Pork and Beans
1/3 cup Brown Sugar
3/4 cup Ketchup
2 tsp Worchestire Sauce
3/4 lb of Hamburger browned with 1/2 of a small diced onion
1/2 lb Bacon cooked and broken up
*I add 1/2 of a green pepper diced up.

Combine all ingredients, giving it a good stir mix it all up.  Bake at 300 degrees for 2 hrs.

*I covered mine with tinfoil for the first 1 1/2 hours, then uncovered the last half hour.  Covering them helps so they don't dry out completely. I diced the green pepper up so small that the kids had no clue they were in there. 
*This is a good recipe to go with any meat.

Lime Rice

4 tsp. chicken bouillon
4 tsp. garlic
1/2 bunch cilantro
1 tsp. cumin
1 can green chilies
3/4 tsp. salt
1 Tbl. butter
1/2 chopped onion

Blend all ingredients in blender then put in pan and add 6 cups water and bring to a boil. Add 3 cups rice (non instant) and simmer 30 minutes.  Serve as a side dish or with your sweet pork taco salads. This recipe makes alot.

**This recipe came from one of my friends here in Carson City.  I was surprised when I read the recipe and I didn't see any LIME in it.  I called my friend to make sure it didn't have any LIME.  It doesn't, but with the ingredients combined together, you can taste a lime flavor.  Really YUMMY!

Ham Fried Rice

2 cups non-instant rice
4 cups chicken broth
1 1/2 cup diced ham
1 cup frozen peas
1/2 of a large onion, diced
1 clove garlic, pressed
3 eggs, slightly beaten
olive oil

Cook rice in the chicken broth then let rice cool.  Saute ham, peas, onions and pressed garlic in a WOC or large frying pan with a little bit of olive oil.  When onions are tender add rice to ham/pea mixture.  Pour slightly beaten eggs over the top and stir combining all ingredients.  Cook over medium heat till eggs are done.

**Jim loves to create new dishes.  This is one of his ohhh sooo yummy KREATIONS!  He looked at several different Fried Rice Recipes and after trying a few different things, he created one we like LOVE!
I never knew it was so easy to make these yummy dishes!  The kids loved it too!  And I Love having Jim in the KITCHEN with me!

Sweet Corn Muffins

1 1/2 cups all-purpose flour
2/3 cup granulated sugar
1/2 cup Yellow Corn Meal
1 Tbsp. baking powder
1/2 tsp. salt
1 1/4 cups milk
2 large eggs, lightly beaten
1/3 cup vegetable oil
3 Tbsp butter or margarine, melted

Preheat oven to 350 degrees.  Grease or Paper-line muffin pans.
Combine flour, sugar, corn meal, baking powder, and salt in medium bowl.  Combine milk, eggs, vegetable oil and butter in small bowl; mix well.  Add to flour mixture; stir just until blended.  Pour into prepared muffin cups filling about 2/3 full.
Bake for 18-20 minutes or until wooden pick inserted in center comes out clean.  Cool in pans on wire racks for 5 minutes; remove to wire rack to cool slightly.  Serve warm.

** My girls Love muffins for breakfast, but they are picky about what kind.  They like just plain muffins.  I used to buy the jiffy mixes, but now I make them with this recipe or with Cream of Wheat.  They are more moist than the jiffy mixes.  I Like to make mini-muffins too.  They are easier for the kids to eat.

Jello Parfait

2 (3 oz) boxes jello
2 cups boiling water
1 cup cold water
Cool Whip

Stir Jello in boiling water til it is dissolved.  Add cold water.  Pour into a 9x9 casserole dish and place in fridge to setup.  When set cut the jello into little cubes and spoon into a bowl.  Add as much cool whip as you would like and stir.

This is a dish that goes with anything.  And is very easy.  Back home I could find this in the grocery store and I would buy it to take on picnics or other family gatherings.  When I went looking for it at a grocery store in Nevada I asked someone at the Deli where I could find it.  They had no clue what I was talking about.  Now we make it all the time.  Yes, I say WE because it is easy enough for the kids to make and they LOVE it!

Rainbow Jello


Aunt Melinda's Rainbow Jello
3 (8 oz) plain yogurt
1 pkg (3 oz) of each color jello (purple, red, orange, green and yellow

Dissolve each jello (one at a time) in one cup boiling water. Divide into 2 bowls. In one bowl add 3 tablespoons cold water. Pour into dripper and jell. In other bowl add 1/2 cup yogurt and mix well. Pour this on plain jelled jello. Let this jell also. Continue with each jello layering them ontop of each other.


This jello may be time consuming, but it is pretty and kids love it.
