April Weekly Menu 2

Sunday:  Haystacks
Monday:  Leftovers
Tuesday:  Chicken and Pasta Voila Meal
Wednesday:  Spaghetti/Green Beans 
Thursday:  Pizza 
Friday:  Cafe Rio Sweet Pork Salads (Homemade)

So excited for Easter and the yummy "traditional" food we have!  Just to name a few:  Rice Pudding, Roasting Hotdogs over a fire, Mom's Potato Salad, Reese's Peanut Butter Eggs, Ham and Rolls!

April Weekly Menu 1

Sunday: Waffles
Monday:  Grilled Cheese/Fries
Tuesday:  Taco Salad
Wednesday:  Grilled Kabobs with Chicken/Peppers/Carrots/Potatoes and Green Salad
Thursday:  Pork Chops/Potatoes/Veggies
Friday:  SIZZLER in Sacramento!

For over 12 years now we have used our waffle maker that makes two waffles at a time.  It was fine when the family had only 3 people, but now we have 6 people anxiously waiting for waffles!  With 6 of us waiting for our waffle, the first person who got their waffle would be ready for their 2nd waffle when the 4th person got their 1st.  Well, NOT ANYMORE!  No more waiting!  We finally got us a waffle iron that cooks 4 waffles at a time!  We actually all had waffles together instead of watching one eat theirs while we inpatiently wait!  We tested it out on Sunday for dinner!  Jim cooked the waffles and actually was able to sit down and finish his with the rest of us!  I'm so excited to have it.

Friday:  Pizza

March Weekly Menu 3

Sunday:  BBQ Pork Ribs/Microwave Potatoes/Corn/Jello
Monday:  Baked Potatoes
Tuesday:  LEFTOVERS
Wednesday:  Mac-N-Cheese
Thursday:  Baked Potato Soup (I baked extra potatoes on Monday for this)
Friday:  Tacos

It's nice to have family that live in Idaho and can get you a good buy on FRESH Potatoes.  We got a 50 lb box awhile ago and have loved having them for what ever we need.  When I do baked potatoes I always do extra so I can make hasbrowns for breakfast.  This week I even used some of the extras in a Baked Potato Soup.  So next time you do baked potatoes, through a few extras in for other uses!

This week was Crazy!  We had plenty of leftovers to have them two nights in a row!  It helped me...I was in no mood to cook!  Tried a new Recipe.  Pizza Casserole.  The kids had seconds.  Guess that means they liked it!

Thursday:  Mac-N-Cheese for the kids....(I went to RS and had Ceaser Salad/Beef Stew/Scones/Peach Cobbler
Friday:  Sweet and Sour Chicken/Ham Fried Rice


I switched my Leftover night to Tuesday because our schedules changed.
Jim and I tried a new Sweet and Sour Chicken Recipe and Ham Fried Rice!  We loved it and will be making it again SOON!  I'll post the recipe later this week!

Friday:  Hamburgers/Chips

Guess what our Hamburgers were made off?!  Jim was grinding some deer meat and beef cube steaks to make some jerky.  I told hime that I had planned to make Hamburgers for dinner and that the meat he was grinding look really good.  So, he made some patties from the meat he was grinding.  We cooked them on our Goerge Foreman Grill.  The burgers were very LEAN!

I haven't really got my routine back with cooking yet.  After all the Christmas shopping I am STILL avoiding the stores....even the grocery store, so alot of my meals are being created with what ever is on hand....Do any of you have the same problem after Christmas?  Not wanting to go shopping.  I am really enjoying just hanging at home.

I know Christmas was over two weeks ago but I still have Christmas remains in my Kitchen.....Candy that the kids just aren't eating quick enough.  We spent our whole holiday vacation with family in Utah.  There was so much yummy food.  I decided I wanted to list some of the yummy things we ate.

Not much planning the meals has been happening lately.  Trying to prepare for the holidays has made it that dinner time comes around and we find what we can to make.  I'm loving having daughters that are getting old enough to fix dinner when I am busy with other things.  I told my Mom the other day, "HA, I have FOUR girls to help me!"  Love my Girls!

Yes, I did a Thanksgiving Meal 10 days after Thanksgiving.  We never have leftovers when we visit family for Thanksgiving and to me, the leftovers are a big part of the Holiday too.  So, with Jim and my girls' help we made a yummy dinner.  I didn't over cook the turkey (like I always do)!!  Everything was so yummy.  I even tried GREEN BEAN casserole for the first time.....thanks to a friend and her family that joined us.  I quite liked it too!

Ok, as I looked back over this week.....Holy Cow!  What a great mother I am.  Monday was the only day I fixed something.  Tuesday I had a crockpot meal planned and never got it in the crockpot, then something came up in the evening and Brindley ended up fixing Mac-N-Cheese for the girls.  Wednesday I was busy running errands in the late afternoon/evening so I picked up some pizza.  I had to clean the fridge out Thursday because we left Friday for Koosharem.  I have had several frustrating experiences with the "fast food" places in Ely, so we always go to the grocery store (Ridley's) there and pick out microwave meals or something from the deli, then take it back to our motel to eat.  The kids love it!  Sunday we were at Mom's and she did a yummy lasagna.  Let's see if I can make this week a little better.  I'm at Mom's still, so I know we will be eating better!

So I have been contemplating a giveaway for the Holidays.  I have an idea of one that I will be doing!  I am so excited to do it.  My MIL was visiting this weekend and brought me part of my giveaway!  So excited to share it with you.....but not for a little bit!  You will have to check back for it.

I love this time of year when you go in a grocery store and they have all of their baking ingredients/supplies on a display in the middle of the main isle.  I love seeing the stuffing displayed on the end caps along with the canned cranberries.  I noticed the other day that the frozen TURKEYS had taken over the frozen area.  So Exciting!  And to smell the pine cones fragranted with CINNAMON!  Enjoy it, it will be gone before you know it.
